TOLD YOU SO: From the latest
American Journal of Clinical Nutrition: "Natural
selection has had <1% of hominid evolutionary time to eliminate
the inevitable maladaptations consequent to the profound transformation
of the human diet resulting from the inventions of agriculture
and animal husbandry...The mean NEAP (net endogenous acid production)
for 159 retrojected preagricultural diets (an approximation of
what people ate in primitive times) was 82 mEq/d...the average
American diet...48 mEq/d...diet induced metabolic acidosis and its
sequelae in humans eating contemporary diets...cereal grains
and energy-dense, nutrient-poor foods... reflect a mismatch between
the nutrient composition of the diet and...requirements for optimal
systemic acid-base status." BEHAVIOR: In 1997, a Wisconsin school instituted a healthy lunch program, replacing cafeteria meals of fast-food nachos and French fries with fresh salads, meats, whole grain bread and fruit. At the same time, vending machines were removed and quality drinking water was added. The school's incidence of dropouts, expulsion, drug use, weapons and suicide is now zero. On top of this, reports say that grades have significantly improved. (This school previously reported severe discipline problems including students carrying weapons.) Critics have argued that healthy meal programs are too expensive for most high schools. However, costs for vandalism, litter, and high security have gone down at the Wisconsin high school, which offsets costs of the nutritious meals. (Stratiawire, October 14, 2002.) CARCINOGENS: The reproductive hormone estrogen, a component of hormone replacement therapy, has joined the government's roster of known causes of cancer in humans. Estrogen is known to cause breast and uterine tumors. (National Toxicology Program, 10th Report on Carcinogens, 2002.) CARDIOVASCULAR:
Drinking at least five glasses of water per day significantly
reduces the risk of a heart attack, while high intake of other fluids
can increase the risk. (Am J Epidemiol, 2002; 155(9):827-33.) Keep in mind that metabolic acidosis greatly exacerbates the toxicity of heavy metals in the diet. When eating fish, squeeze lemon juice on them or drink some lemon water. The citric acid in lemons chelates and removes heavy metals. DIABETES: The risk of Type 2 diabetes, the most common form often linked to obesity, may be lowered by eating nuts. Those who eat 1 to 4 ounces of nuts a week lower their risk by 16%, and those who eat less than 1 ounce per week lower their risk by 8%. Unsaturated fats in the nuts allow glucose to be used more efficiently and help regulate blood glucose levels. (J Am Med Assoc, 2002; 288:2554-60.)
